Acai-Chia Parfait layered with Berries
Acai bowls look so much like ice cream, it’s hard to believe they are good for you. An acai bowl is basically a thick smoothie that’s been topped with granola and fruit, and ready to be devoured by the spoonful. Our version is layered with chia pudding, which makes for an over the top decadent breakfast.
Serves 2
Chia Pudding:
4 tablespoon chia seeds
1 cup Real Coco Original Coconut Milk
½ teaspoon vanilla extract
Acai Smoothie Layer:
3.4 ounce frozen acai
1 cup frozen strawberries
1 banana, peeled, sliced and frozen
¼ cup Real Coco Mango Coconut Water
¼ cup fresh blackberries, mashed with a fork
to garnish: fresh berries, granola, mint leaves, Real Coco Plain Coconut Chips
Add the chia seeds, almond milk and vanilla into bowl, mix to combine and set aside for 15 minutes, until the seeds absorb all the liquid.
Add all the acai, strawberries, banana, and coconut water into a blender and process to obtain a creamy mixture. To assemble the jars add divide the mashed berries, then a layer of chia pudding, top with acai smoothie and garnish with fresh fruits, mint leaves, granola and coconut flakes.
