Strawberry Nice Cream Parfait

Nice cream is a fruit-based vegan and dairy-free dessert that uses a base of frozen banana and coconut milk to create an ultra-creamy consistency. Enjoy it straight out of the food processor for a consistency like soft-serve, or set it up in the freezer for a couple hours for a scoopable treat. 

Serves 2

4 bananas, sliced and frozen, divided
2 teaspoons vanilla extract
¼ cup Real Coco Original Coconut Milk
1 cup frozen strawberries
Toppings: cacao nibs, hemp seeds, fresh fruit

Add 2 bananas to food processor or blender and blend until smooth. Add 1 teaspoon vanilla, 2 tablespoons coconut milk and blend again. Transfer to a container and freeze. Repeat with a second batch, add in strawberries and blend until smooth.

Eat right away, or transfer to a container and freeze for an hour for an ice-cream-like texture. Layer nice cream in glasses with fresh fruit and toppings.
