Quinoa Breakfast Bowl
Who said quinoa just has to be for dinner?
Ingredients
2 cups Organic Unsweetened Coconut Milk
½ cup Quinoa, rinsed
Blueberries
6 tbsp Hemp Seeds
2 tbsp Ground Flaxseed
1 tsp Cinnamon
½ tsp Sea Salt
1 tbsp Maple Syrup
Spoonful of Peanut Butter
Splash of Organic Unsweetened Coconut Milk
Instructions:
In a medium saucepan, combine the coconut milk, quinoa, sea salt, and cinnamon. Bring to a gentle simmer over medium heat, then reduce heat to low. Cover and cook for 12–15 minutes, stirring occasionally, until the quinoa is tender and the liquid is absorbed. Remove from heat and stir in the ground flaxseed and maple syrup. Spoon the quinoa into a bowl. Top with blueberries, hemp seeds, and a spoonful of peanut butter. Finish with a splash of coconut milk and serve warm. Enjoy!
