These pink watermelon pops are the perfect end to summer. These pops are sure to wow the adults and kids.
Makes 10 popsicles
2 ½ cups fresh watermelon juice
2 ½ cups Real Coco Organic Pink Coconut Water
½ cup mini dark chocolate chips
Real Coco Organic Coconut Creamer French Vanilla
2 Tbsp. fresh lime juice
1 Tbsp. mint leaves
Combine watermelon juice and pink coconut water in pitcher and fill molds with liquid, leaving 1-inch of space at the top. Freeze for 1 ½ hours, until semi-solid and slushy. Add chocolate chips, stirring into mold. Place popsicle sticks in. Freeze for another 2 hours until solid. Add a thin layer of coconut creamer; freeze. Combine ½ cup water, lime juice, and mint leaves in a blender and puree until smooth. Sweeten with agave if desired. Pour into molds until completely filled and freeze.
