Mango Lassi Smoothie
This refreshing spin on this classic mango drink made with delicious Indian spices and plant-based ingredients. The key is freezing your own super ripe sweet mangoes, but frozen ones from the grocery store works too!
Serves 2
1 ½ cups frozen mango cubes
1 cup plain yogurt
½ cup Real© Coco Organic Coconut Milk
1 tbsp. honey or agave
½ cup ice
1 lime wedge
½ tsp. ground cardamom, plus more to finish
Saffron, to garnish (optional)
Fresh mango cubes, to garnish (optional)
Place frozen mango, yogurt, coconut milk, agave, ½ cup ice, squeeze of lime juice, and cardamom into a blender and blend until smooth. Divide into two glasses and garnish with a sprinkle of cardamom, saffron, and fresh mango cubes.
