Fall Pumpkin Spice Oatmeal
This quick Pumpkin Oatmeal is a five-minute vegan and gluten-free breakfast with chia seeds and coconut milk.
Serves 2
⅔ cup oats
½ cup pumpkin puree
⅔ cups
Real© Coco Organic Coconut Milk
1 cup water
2 tablespoons chia seeds, plus more
Bananas and pepitas, for garnish
Pinch of cinnamon
Maple syrup, for drizzling
Add oats, pumpkin, coconut milk, water, and 2 tablespoons chia to a saucepan. Whisk over medium low heat until oatmeal has thickened to desired consistency. Divide between two bowls. Top with bananas, pepitas, a sprinkling of cinnamon, and chia seeds. Drizzle with maple syrup to finish.
