Shamrock Smoothie
Serves 2
1 cup spinach
½ cup sliced cucumbers
2 tbsp. fresh mint leaves, plus more to garnish
2 dates, pitted
½-inch fresh ginger, peeled
Juice of 1 lime
½ ripe pear, cored, cut into chunks
2 cups Real© Coco Organic Coconut Water
1 cup coconut yogurt, divided
Honey or agave, to garnish
Coconut flakes, to garnish
Add spinach, cucumbers, dates, ginger, lime juice, pear, and coconut water to a blender. Blend on high until smooth. Using agave or honey, brush side of glass. Press mint sprigs against the glass to stick and fill with yogurt. Top glasses with green smoothie, garnish with mint sprigs, and coconut flakes.
