Homemade 3-ingredient vegan fruit jelly that's naturally sweetened with fruit and pink coconut water. Try making this recipe with the kids and get jiggly with it!
Pink Coconut Fruit Jelly
2 cups Real Coco Pink Coconut Water
1 teaspoon agar
1 1/2 cups of fresh fruit (oranges, strawberries, raspberries, blueberries)
In a small saucepan, add Real Coco Pink Coconut water and agar. Whisk to combine and bring it to a boil. Once boiling, lower the heat and whisk for 2 minutes until agar has dissolved. Remove from heat and let cool for 8 minutes. Meanwhile, cut fruit up into bite-sized pieces. Place fruit into molds or ice cube trays and pour pink coconut mixture over the tops to fill. Cover with plastic wrap and place in the refrigerator to chill until firm, about 2 hours.
