Coconut French Toast
A delicious and easy vegan Coconut French Toast that will have you coming back for seconds! Flaxseed meal and coconut milk is used to make an "egg" mixture that helps create that golden brown crust you love.
Coconut French Toast
Serves 4
¼ cup ground flaxseed meal
¾ cup water
1 tsp. cinnamon
¼ tsp. nutmeg
1 tbsp. maple syrup, plus more to drizzle
4 tbsp. vegan butter
¼ cup Real Coco Coconut Milk
½ tsp. vanilla extract
8 slices bread
Coconut flakes, for topping

To make a flax egg, mix ground flaxseed meal with water. In a medium bowl, mix together, and let sit in your fridge for 15 minutes to set up and thicken. Whisk in cinnamon, nutmeg, 1 tbsp. maple syrup, coconut milk, and vanilla.
Heat butter in a skillet over medium heat. Dip bread into mixture and fry sliced until golden brown, then flip to cook other side. Sprinkle with coconut flakes and serve with syrup and berries.
