Caramel Apple Overnight Oats

If you’re always in a rush to get out the door in the mornings, overnight oats are the perfect make ahead breakfast. This recipe is inspired by caramel apples and uses a blend of coconut oil, maple syrup and almond butter to create a healthy “caramel” syrup for drizzling. 

Serves 4

For the Oats:

1 cup rolled oats

1/2 teaspoon ground cinnamon

3 tablespoons maple syrup

1 cup Real Coco Original Coconut Milk

1 medium apple

For the Syrup:

2 tablespoons Real Coco Coconut Oil

2 tablespoons maple syrup

1 tablespoon almond butter

pinch of salt

Real Coco Caramel Coconut Chips, for garnish

Combine oats, cinnamon, maple syrup and coconut milk in a small bowl. Cover and let refrigerate over night. 

In the morning, stir the oats. For the caramel syrup, melt the coconut oil and maple syrup together in a saucepan over medium low heat, then whisk in almond butter with a pinch of salt until smooth. Add a splash of water to loosen if needed. To serve, chop the apple and layer with oat mixture in glasses. Finish with a drizzle of caramel.
