Candy Corn Parfait

Check out these spooktastic parfaits! You bet we had to give our chia pudding recipe the Halloween treatment. Try making this candy corn-inspired treat at home.

Serves 4

Yellow Layer:
1 ½ cups frozen mango chunks
¾ cup Real Coco Original Organic Coconut Milk

Orange Layer:
1 cup chopped carrots
½ cup frozen mango chunks
¾ cup Real Coco Original Organic Coconut Milk

White Chia Layer:
¼ cup chia seeds
1 cup Real Coco Original Organic Coconut Milk
2 tsp. Agave (optional)

Combine chia seeds and milk into a bowl and stir well. Cover and store in fridge for at least 30 minutes, up to overnight to gel.

For the yellow layer: Blend mango with coconut milk until mixture is smooth. Divide into two cups and place cups in freezer while preparing the next layer.

For the orange layer: Blend mango with carrots and coconut milk until the mixture is smooth. Layer on top of yellow mixture in the cups. Finish by adding chia layers.
