Cacao Energy Balls

These energy balls disguised as candy truffles are packed with protein and make for the perfect post workout snack. Nourish your body and feed your sweet tooth at the same time!

Makes 20 balls

1 cup packed pitted dates (medjool preferred)
2 cups raw walnuts
6 tablespoons raw cacao powder, plus more for rolling
3 tablespoons ground flaxseeds
1/4 teaspoon salt
3 tablespoons creamy almond butter
1 tablespoon melted Real Coco Coconut Oil
melted dark chocolate, for coating (optional)
optional toppings: Real Coco Plain Coconut Chips, crushed freeze dried raspberries, pistachios, rose petals, flaky salt, cacao powder, bee pollen

Add dates to a food processor and pulse until a sticky ball forms. Remove and set aside. Add walnuts to the food processor and pulse into a fine meal. Add cacao powder, flaxseeds and salt. Pulse a few more times to combine, being careful not to overmix. Add the dates back in along with the almond butter and coconut oil. Pulse to combine. Refrigerate for 30 minutes. Using your hands, roll mixture into balls into heaping tablespoon sized portions and placing onto a parchment lined baking sheet. Finish by dipping and rolling into toppings.
