Happy Valentine's Day! We're celebrating with decadent vegan chocolate truffles. They're incredibly rich and a cinch to make with only TWO ingredients.
Vday Vegan Truffles
Makes a dozen
9 oz. vegan dark chocolate, finely chopped
7 Tbs. Real Coco Vanilla Coconut Creamer
For rolling: cocoa powder, coconut flakes, and dried rose petals
In a medium heat-proof bowl, add chopped chocolate. Warm coconut creamer in a saucepan until hot (but not boiling) and pour over chocolate, stirring to combine until smooth. Pour mixture into a container and chill in refrigerator until firm, about 3 hours. Scoop chocolate with a spoon and form into 1 ½” balls. Roll into assorted toppings.
