These granola cluster cookies are healthy sweet treats that are crunchy on the outside and chewy in the middle. Pack a few of these in your lunchbox for a perfect treat on-the-go.
Makes 2 dozen
1/2 cup almond butter
1/3 cup maple syrup
2 ripe bananas, peeled, and mashed
1 1/2 cup rolled oats
1/4 cup chopped raw almonds
1/4 cup chopped pecans
1.43 ounce bag Real Coco Chocolate Coconut Chips
1 cup dried cranberries
1 teaspoon ground cinnamon
1 teaspoon salt
Preheat oven to 325°F. Line a baking sheet with parchment paper. In a large bowl, add the almond butter, maple syrup, and mashed bananas and whisk until combined. Using a wooden spoon, fold in the rolled oats, almonds, pecans, coconut chips and dried cranberries, ground cinnamon and salt.
Onto the prepared baking sheet drop 2 tablespoons of dough, about 2 inches apart and flatten. Bake for 14-15 minutes, until lightly browned. Set aside to cool. Store in an airtight container for up to 3 days.
