Quick, easy and full of flavour, this salmon recipe is perfect for a healthy, light weeknight dinner. Cooking with coconut oil is not only good for you, it’s also versatile and delicious in savory and sweet dishes alike.
2 salmon filets, thawed
1 1/2 tablespoons Real Coco Coconut Oil, melted
juice of 1/2 lime
salt and freshly ground pepper
1 avocado, sliced
Real Coco Plain Coconut Chips and sunflower seeds, for garnish
Preheat oven to 425°F. In a small bowl combine coconut oil and lime juice. Brush mixture all over salmon filets and place in a baking dish. Season with salt and pepper. Bake for 20-25 minutes, or until cooked through.
Serve salmon on a bed of baby greens and avocado slices. Sprinkle sunflower seeds and coconut chips to garnish.
